This crumbed chicken fingers recipe is an all-time favourite with children and is a quick meal to knock up on weeknights. Add a side of chips and it will be a real hit.
- 500g chicken breast
- 2 eggs
- 3/4 cup plain flour
- 3/4 cup breadcrumbs
- Slice chicken breast into strips.
- Place chicken strips in plastic container with flour, remove chicken and shake off the excess flour, then coat in egg and finally breadcrumbs.
- Shallow fry chicken in rice bran oil until golden.
- Serve with your favourite salad and dress with Japanese mayonnaise.
